Brief Description

Dry Japanese white wine made from 100% Kōshū grapes from Katsunuma. Slowly fermented at a low temperature and then aged on fine lees. Fresh fruit, mild acidity, and elegant umami combine to create a balanced, complex Kōshū.

Origin & Style

After at least one month of low-temperature fermentation in stainless steel tanks, the wine remains in contact with its fine lees. Regular bâtonnage – the gentle stirring of the lees – gives it additional body and umami without masking the delicate aromas of the Kōshū grape.
